Job Summary
The Executive Chef leads all culinary operations for an acute care hospital, ensuring the delivery of safe, high‑quality, and nutritionally appropriate meals for patients, visitors, and staff. This role is responsible for overseeing kitchen operations, maintaining strict regulatory compliance, and driving excellence in patient‑centered food service. The Executive Chef partners closely with clinical, operational, and leadership teams to support patient satisfaction, safety, and operational efficiency in a high‑volume healthcare environment.
The hospital is licensed for approximately 176 beds, with an average daily census of 150 patients.
Key Responsibilities
- Lead and oversee day‑to‑day kitchen operations, ensuring safe, sanitary, and efficient food production.
- Plan and execute regular, modified, and therapeutic menus in accordance with clinical nutrition standards and corporate guidelines.
- Ensure strict adherence to standardized recipes, portion control, and presentation standards; complete and utilize daily production sheets and waste logs.
- Taste and evaluate meals to ensure quality, flavor, and consistency prior to service.
- Train, coach, and supervise culinary staff in food preparation, infection prevention, equipment operation, food safety, and sanitation in compliance with company and regulatory standards.
- Establish, maintain, and audit cleaning and preventive maintenance schedules for equipment, storage, and work areas.
- Manage food and supply inventories to meet budgetary guidelines while ensuring uninterrupted patient care and service.
- Oversee appropriate utilization of leftover food products in accordance with company policies and food safety standards.
- Ensure full compliance with federal, state, and local health department regulations and preparedness for internal, external, and third‑party audits.
- Enforce facility, department, and company safety policies, including accident prevention and occurrence reporting.
- Collaborate with Food & Nutrition leadership, clinical teams, and hospital stakeholders to support patient satisfaction, performance improvement, and quality initiatives.
- Participate in departmental meetings, staff development, training programs, and professional growth opportunities.
Preferred Qualifications
- Associate’s degree in Culinary Arts or equivalent professional experience.
- Minimum of 3–5 years of progressive culinary and kitchen management experience, depending on formal education or training.
- Acute care hospital, healthcare, or institutional food service experience strongly preferred.
- High‑volume, complex food service operation experience highly desirable.
- Institutional and batch‑cooking experience required.
- Hands‑on chef leadership experience essential.
- Extensive catering experience a plus.
- Strong knowledge of food service trends, with a focus on quality, nutrition, sanitation, food safety, cost controls, and presentation.
- Proficiency with Microsoft Office applications (Word, Excel, PowerPoint), Outlook, email, and internet‑based systems.
- ServSafe certification highly desirable (or ability to obtain upon hire).
