Job Summary

As a Sous Chef at the Brooklyn Botanic Garden, you will play a key role in supporting the overall success of our diverse food service program, which includes a full-service café, retail grab-and-go offerings, and special catering events. You will assist in all aspects of culinary operations including planning, ordering, inventory, and food preparation. This role requires strict adherence to client culture, Department of Health regulations, and Restaurant Associates’ standards for food quality, freshness, and presentation. The Sous Chef also trains, develops, and directs the back-of-house team to deliver exceptional dining experiences for guests across all service formats.

Essential Duties and Responsibilities:

  • Assist in coordinating and actively participate in the preparation and cooking of food for the café, retail, and catered events.
  • Collaborate on menu planning and creation for seasonal, on-trend offerings that reflect the Botanic Garden’s environment and clientele.
  • Roll out new culinary programs in partnership with the marketing and culinary team.
  • Support management of food and labor cost controls, inventory, and waste reduction.
  • Uphold sanitation, safety, and quality standards in compliance with Department of Health and company policies.
  • Provide leadership, training, and coaching for culinary associates.
  • Perform other related duties and special projects as assigned.

Qualifications:

  • Minimum of 5 years of progressive culinary experience, including at least 1 year in a supervisory or management role.
  • Background in restaurants, hotels, corporate dining, cultural institutions, or related high-volume food service operations.
  • Strong knowledge of culinary trends with a focus on quality, production, safety, sanitation, and cost management.
  • Experience with production sheets, ordering systems, and inventory management.
  • Demonstrated leadership, coaching, and staff development skills.
  • ServSafe or Department of Health Certification preferred.
  • Proficiency with MS Office, especially Excel.
  • Associate’s degree in Culinary Arts preferred.
