Salary: $75,000 to $95,000

Job Summary

ESSENTIAL JOB FUNCTIONS:
• Prepares or directs preparation of all food by the kitchen staff. Follows recipes, portioning, and presentation standards. Completes and utilizes daily production worksheets and waste log sheets. Tastes completed meals to ensure quality.• Conducts daily meetings with production team members.
• Trains kitchen staff in food preparation, operation of equipment, food safety and sanitation based on Corporate and Regulatory standards.
• Establishes and maintains cleaning and maintenance schedules for equipment, storage and work areas. Ensures that kitchen staff follows and completes schedules as assigned.
• Maintains the inventory of food and non-food supplies to stay within established guidelines while assuring that necessary product is available when needed.
• Create par levels for storeroom
• Place food orders and work with chef on required food for menus
• Order Chemicals
• Makes all decisions regarding the utilization of leftover food products staying within Corporate guidelines for such products.
• Plans and prepare menus for special events as may be requested by the Executive Chef
• Reads and complies with all policies and procedures of Bon Appetit and Compass as appropriate.
• Completes all daily, weekly or monthly reports as outlined in the corporate policies and procedures on a timely basis meeting all prescribed deadlines
• Projects and practices consistent ownership attributes, which provide a high level of customer service at all points of contact,
• Create par levels for storeroom
• Work with the receiver to ensure proper food storage and HACAPP protocol is always followed
• All invoicing
• All purchasing needs
• All other duties as assigned.
