Job Summary

Do you enjoy creating and implementing innovative culinary solutions to customers? Chartwells Higher Education is seeking an inspired Catering Executive Chef at the University of Idaho Moscow, ID. Our Catering Chef will provide onsite culinary expertise for all catering events and will manage culinary operations to meet production, presentation, and service standards. Events will range from drop-offs to upscale galas.  We want to facilitate your growth as a professional in culinary arts, and at Chartwell’s, you will find growth opportunities to be endless. 


Key Responsibilities:

  • Works directly with internal and external clients managing the catering process from beginning through execution
  • Ensures culinary and services standards including recipe compliance and food quality are implemented and achieved 
  • Works with Catering Director to build and retain client relationships
  • Responsible for FOH operations in the absence of the Director
  • Develops and implements unique and cuisine appropriate menus
  • Collaborates with the Catering Director to set menu prices
  • Identifies ways to increase catering revenue and decrease cost through waste management and cost control measures.
  • Hires and trains kitchen staff in food preparation, safe handling, and operation of equipment, food safety and sanitation based on Company and regulatory standards
  • Maintains inventory of food and non-food supplies to stay within established guidelines while assuring that necessary product is available when needed
  • Complies with federal, state and local health and sanitation regulations and department sanitation procedures
  • Prepares meals and completes meal prep support as needed
  • Performs other duties as assigned


Preferred Qualifications:

  • A.S. or equivalent experience
  • Three to five years of progressive culinary/kitchen management experience
  • Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation
  • Experienced with computers; to include Microsoft Office (Word, Excel and Power Point), Outlook, E-mail and the Internet
  • Extensive catering experience 
  • High volume, complex foodservice operations experience - highly desirable
  • ServSafe certified – highly desirable

Salary Range:$80,000-$85,000
Starting Rate of pay may vary based on factors including, but not limited to: location, education, training, and/or experience
