Job Summary
Summary: Directly supervises food-service associates in accordance with policies, procedures and applicable laws.
Essential Duties and Responsibilities:
- Fully understand dishwashing process and become familiar enough with dish machines to start up and shut down. Lead the charge on deep cleans and descaling of these units.
- Perform temperature checks twice daily on any utilized dish machines.
- Perform regular audits and inspections of kitchens. Both safety and sanitation.
- Maintain organization in dish pits in kitchens as well as storage rooms.
- Take the lead on small trainings for Utility team and pre/post-shifts.
- Ensure proper food handling, sanitation, hand washing, and glove use.
- Ensure proper storage of chemicals and monitor inventory to ensure we do not run out.
- Monitor linen usage and proper linen disposal.
- Ensure proper maintenance of industrial units in kitchens.
- Report violations of sanitation and food safety practices to leadership team (Sanitarian, Sous Chefs, Exec Chef).
- Monitor general cleanliness of large kitchens.
- Monitor pallets of product as they come in to the production kitchen to ensure we are receiving product at proper temperature and all product is received in good condition.
- Provide feedback to leadership on Utility team (Struggles, wins, recommendations, team frustrations, etc.)
- Assist in proper time over temperature practices.
- Assist in freezer/cooler logs throughout kitchens.
- May preform other duties and/or lead projects as assigned.
- Pull carts from other spaces that’s full of dirty dishes, you can assign team members to help with pull carts as well.
- Ensure the team is closing out together at end of night, you should be the last person to clock out at end of shift.
- Send end of night recap to Chef Christina via email at end of shift, It`s okay to send once you get home from your shift
- Report any incidents to closing manager/Chef
