  • Pay Range: $95,000.00 - $105,000.00 annually

Role Summary:

 

The Recipe Development Executive Chef (EC) is a culinary leader reporting to the Lead Development Chef. The Recipe Development EC, in partnership with the Executive Development Chef, CDK takes full ownership and responsibility for the management and productivity of the recipe development team.

 

The Recipe Development EC partners with the Menu Development EC in the development of recipes and menus for all lines of business, working closely with cross functional teams including: Pillar Leads, CPU teams, Food and Workplace Safety, Vendor Relations, Learning & Development, Sustainability, Nutrition, Equipment Maintenance and Repair, Marketing Communication and  Engagement. The Recipe Development EC is expected to devote 25% of their time to menu development and 75% to recipe development. This Chef is an ambassador of the Food @ Google Programs and collaborates to represent Food @ Google.

 

The great things you will be expected to do:

 

  • Ownership of recipe development for the culinary program, to include:
    • Oversight of recipe development team to ensure timely delivery of recipes and lead tastings from a culinary perspective
    • Leads and actively participates in the writing of all recipes
    • Supports the development of all menus and owns development of branded concept menus
    • Supports research and development of new recipes and efficient techniques for menus and dish components, in line with the program vision
    • Support accuracy of recipe documentation to ensure seamless transition to EMS partners
    • Ensures that all products and ingredients that are used are purchased following sector and Google Food purchasing standards and sustainability commitments.
    • Partners with Procurement on ingredient selection to drive the best quality outcome with the optimum price per dish
    • Ensures product purchases are timely placed, accurate and reasonable according to the task of recipe testing, and waste is minimized and repurposed where possible 
  • Partners with cross functional teams to ensure recipe and menu feasibility of execution for the Culinary Operations teams
  • Supports recipe scaling to ensure seamless execution, to include:
    • Alignment with Culinary Operations stakeholders
    • Proper documentation and data integrity of recipes
    • Partnership with Training & Activation stakeholders to deliver accurate training materials
  • Supports culinary innovation, excellence and quality standards
  • Sets an expectation of hospitality that is friendly and engaging
  • Manages and mentors toward business goals, ensuring maturation and training of our team
  • Supports testing and implementation of Google Food culinary initiatives and sector projects. Ensure initiatives meet deliverables
  • Supports strategic recommendations directly impacting all culinary operations to senior management
  • Ensures that all hiring and training standards are met and documented for direct hires
  • Partner with key support stakeholders (Procurement, POps/Human Resources, Food Safety and Workplace Safety, L&D, Strategic Operations) to ensure program alignment across departments
  • Works with direct Manager to ensure all sector and Compass employee guidelines are implemented and adhered to
  • Treats everyone with professionalism, care and respect
  • Communicates with our Partner honestly, accurately and in a timely manner
  • Other projects and assignments as assigned by your direct manager and leadership

 

Minimum Qualifications

 

Technical

  • Degree from an accredited culinary institution preferred; not required
  • Minimum of 4 years culinary supervisory experience in a similar high volume, quality food service establishment
  • Proven track record in leadership: coaching and teaching skills with individuals, and teams
  • Ability to proactively solve problems and work independently and/or in teams, effectively and efficiently with limited supervision
  • Proven ability to manage budgets, utilize reporting platforms, and meet financial goals
  • Ability to effectively communicate, motivate and interact with all levels within the organization
  • Working knowledge of Google Docs, Microsoft Word, Excel and PowerPoint
  • Ability to maintain confidentiality

 

Program Advocacy

  • Understanding of the intentionality of the program and ability to make decisions as a program advocate
  • Ability to speak and present effectively in a group setting to Associates, Managers and our Partners and represent the Google Food Brand
  • Ability to translate asks into actual needs; separating the ask into the programmatic need; problem solver

 

Culinary

  • Expert level culinary knowledge and ability to communicate effectively with chefs
  • Experience in R&D, operations, or concept development a plus
  • Expert knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls and presentation
  • Experience in recipe writing and menu development
  • Highly developed culinary skills with comfort in traditional, modern and multiethnic cuisines
  • Ability to create new, innovating and exciting dishes within guidelines of the food program
  • Passion for food trends, flavors, innovation and recipe development

  • Organized and dynamic thinker and leader that is comfortable with executing and managing process
  • A proven track record of leadership

Job Summary

Job Summary: 

Working as the Executive Chef, you will be responsible for overseeing kitchen operations while maintaining a safe and sanitary work environment for the staff. You will prepare or direct the preparation of meals in accordance with corporate programs and guidelines. This is an exciting opportunity for an energetic, entrepreneurial Culinary professional. 

Key Responsibilities:

  • Plans regular and modified menus according to established guidelines
  • Follows standardized recipes, portioning and presentation standards. Completes and utilizes daily production worksheets and waste log sheets. Tastes completed meals to ensure quality
  • Trains kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation based on Company and regulatory standards
  • Establishes and maintains cleaning and maintenance schedules for equipment, storage and work areas. Ensures that kitchen staff follows and completes schedules as assigned
  • Maintains inventory of food and non-food supplies to stay within established guidelines while assuring that necessary product is available when needed
  • Makes all decisions regarding utilization of leftover food products staying within Company guidelines for such products
  • Complies with federal, state and local health and sanitation regulations and department sanitation procedures as evidenced through local health department and third-party audits
  • Follows facility, department, and Company safety policies and procedures to include occurrence reporting
  • Participates and attends departmental meetings, staff development, and professional programs, as appropriate

Preferred Qualifications:

  • A.S. or equivalent experience
  • 5+ years of progressive culinary/kitchen management experience, depending upon formal degree or training
  • Extensive catering experience a plus
  • High volume, complex foodservice operations experience - highly desirable
  • Institutional and batch cooking experiences
  • Hands-on chef experience a must
  • Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation
  • Must be experienced with computers; to include Microsoft Office (Word, Excel and Power Point), Outlook, E-mail and the Internet
  • Must be willing to participate in client satisfaction programs/activities 
  • ServSafe certified - highly desirable
