Role Summary

We are seeking an analytical and creative Recipe Development Sous Chef to join our Bon Appétit team. This critical culinary leadership role reports directly to the Recipe Development Executive Chef and serves as a primary driver of the program's technical culinary foundation.

As the Recipe Development Sous Chef, you are responsible for the meticulous writing, testing, and refinement of recipes across all lines of business. You will act as a bridge between culinary innovation and operational scalability, ensuring that every dish is not only delicious and culturally authentic but also accurately documented for our culinary teams. You will collaborate extensively with the Recipe Development EC to contribute to menu strategy, research efficient production techniques, and ensure all offerings align with the future-forward vision of the Food program.

Furthermore, you will be a lead ambassador for the Food brand. As a Recipe Development Sous Chef, you will champion a culture of professionalism, continuous improvement, and hospitality. You will transform complex requests into functional culinary solutions, ensuring that our food program continues to inspire and enable more sustainable lifestyles through precise, high-quality, and innovative recipe design.

Key Responsibilities

  • Execute Precision Recipe Development: Lead the writing and testing of recipes, ensuring the timely delivery of drafts developed according to specific guidance and programmatic needs.

  • Lead Research & Development: Support the exploration of new recipes and efficient techniques for menu components, keeping the program at the forefront of culinary trends and sustainable practices.

  • Facilitate Culinary Tastings: Prepare and present dishes for formal tastings, demonstrating a degree of technical skill and the ability to pivot and make adjustments based on feedback.

  • Data Integrity: Partner closely with Recipe Editors to ensure accurate documentation, precise unit measurements, and data integrity across all digital recipe platforms.

  • Drive Culinary Innovation: Support the testing and implementation of campus-wide culinary initiatives, ensuring that all projects meet deliverables and maintain the program's quality standard.

  • Mentorship & Talent Maturation: Provide coaching and teaching to peers and team members, fostering a culture of professional growth and a solutions-based approach to culinary challenges.

  • Strategic Stakeholder: Communicate with our Partners and senior management accurately, translating high-level "asks" into actionable, programmatic needs.

  • Operational Compliance: Work closely with leadership to ensure all sector guidelines and safety standards are implemented and adhered to throughout the R&D process.

Minimum Qualifications

  • Education: Degree from an accredited culinary institution preferred, not required.

  • Culinary Skill: Highly developed skills in traditional, modern, and multi-ethnic cuisines with a passion for global flavors and innovation.

  • Recipe Expertise: Proven experience in recipe writing and menu development; previous experience in a specialized R&D or concept development role is a significant plus.

  • Leadership Experience: Minimum of 2 years of culinary supervisory experience in a high-volume, premium food service or corporate dining establishment.

  • Strategic Thinking: Ability to translate abstract requests into actual needs, separating the "ask" from the programmatic requirement with a lens of continuous improvement.

  • Technical Proficiency: Proficient working knowledge of Google Suite tools (Docs, Sheets, Slides) for data management and presentation.

  • Communication & Presentation: Ability to speak and present effectively to diverse groups, including Associates, Managers, and Partners, while maintaining confidentiality and a positive attitude under pressure.

  • Safety & Standards: Deep knowledge of food safety, allergens, and food cost controls as they relate to scalable recipe production.

  • Certifications: ServSafe Manager Certification preferred.

While this schedule and location are currently projected, they are flexible and may be adjusted to meet evolving business demands.
