Job Summary
We are seeking an experienced and refined Service Director to join the leadership team at Marcel, the new cultural destination from Roman and Williams in partnership with Sotheby’s, located in the iconic Breuer building on Madison Avenue. Marcel is more than a restaurant; it is a multi-faceted experience with multiple outlets. Together, these outlets form a destination where hospitality, cuisine, design, and art converge.
The Service Director will oversee all aspects of front-of-house service, ensuring that every guest interaction reflects the precision, warmth, and artistry that define Marcel. This role requires a leader with a deep understanding of luxury service standards, a passion for old-school hospitality, and the ability to inspire a team to deliver elevated experiences across multiple outlets.
What you’ll do:
- Lead, train, and inspire the service team across all outlets, ensuring seamless coordination and consistency
- Oversee all aspects of service delivery, from pre-shift preparation through post-service review, maintaining exacting standards at every touchpoint
- Partner with the General Manager, Executive Chef, and Beverage Director to align culinary and service experiences
- Refine and enforce all service standards, steps of service, and guest engagement protocols, ensuring each moment reflects Marcel’s refined hospitality
- Manage recruitment, onboarding, and development for all FOH staff, fostering a culture of excellence, respect, and continuous learning
- Maintain strong guest relationships, anticipating needs, personalizing experiences, and ensuring loyalty through attentiveness and grace
- Oversee scheduling, floor coverage, and labor management in alignment with operational and financial goals
- Collaborate with the events team to ensure flawless execution of private, semi-private, and hosted experiences
- Uphold all safety, sanitation, and compliance standards for FOH operations
What we’re looking for:
- 5+ years of leadership experience in fine dining or luxury hospitality, with at least 2 years in a senior service or operations management role
- Exceptional leadership and training skills with a natural ability to inspire and coach teams
- Mastery of fine dining service standards, table-side presentation, and guest recognition practices
- Deep understanding of wine, beverage, and food pairing etiquette
- Proven success managing high-volume operations while maintaining refined precision and grace
- Excellent communication and interpersonal skills, with a polished, professional presence
- Strong organizational, administrative, and financial management abilities
- Flexibility to work nights, weekends, and holidays in alignment with hospitality operations
This is a rare opportunity to join one of New York’s most anticipated openings and define the guest experience for a destination that embodies art, culture, design, and hospitality at their highest levels. As Service Director, you will set the tone for service excellence—ensuring that every detail, gesture, and interaction reflects the soul of Marcel.
