Job Summary
As the Executive Chef at Tatiana by Kwame Onwuachi, you will oversee all kitchen operations, ensuring flawless execution of Tatiana’s acclaimed dishes while maintaining a safe, organized, and sanitary work environment. This role is focused on precision, consistency, and leadership, not menu creation, and is ideal for a driven, hands-on culinary professional who thrives in high-volume, upscale dining.
Key Responsibilities
- Oversee daily kitchen operations, ensuring standardized recipes, portioning, and presentation are followed to the letter.
- Lead, coach, and develop all back-of-house staff in food preparation, safe handling, sanitation, and equipment operation.
- Manage prep, plating, and line flow for seamless service during lunch, dinner, and special events.
- Monitor inventory, ordering, and cost controls, ensuring product availability while staying within established guidelines.
- Maintain strict compliance with health, sanitation, and safety standards, as validated by inspections and audits.
- Establish and oversee cleaning, maintenance, and production schedules to keep all kitchen areas organized and inspection-ready.
- Make operational decisions on product usage, including the responsible handling of leftovers per company policy.
- Collaborate closely with front-of-house leadership to deliver smooth, coordinated guest experiences.
- Attend departmental meetings and participate in ongoing staff development and training programs.
Preferred Qualifications
- A.S. degree or equivalent experience, with 5+ years in progressive culinary leadership, ideally in upscale or fine dining.
- Hands-on experience in high-volume, complex foodservice operations; extensive catering experience is a plus.
- Strong knowledge of food safety, sanitation, cost controls, and production systems.
- Proficient with Microsoft Office, Outlook, and basic kitchen management technology.
- ServSafe certification (or willingness to obtain).
- A collaborative, organized leader with a proven track record of driving consistency and team performance.
