Job Summary
Position Summary
The Sous Chef plays an important role in supporting culinary operations at Lumen Field. This position works closely with the Executive Chef, Executive Sous Chef, and culinary leadership team to execute high-quality food production for game days, concerts, and special events.
This is a hands-on role responsible for preparing and executing menu items while maintaining Levy’s standards for food quality, safety, and consistency. The Sous Chef supports kitchen operations by ensuring preparation, organization, and service run efficiently in a high-volume, fast-paced environment.
Key Responsibilities:
Food Quality & Execution
• Prepare and execute menu items according to Levy recipes and culinary standards
• Ensure all food is prepared, plated, and served with consistency and attention to detail
• Assist with routine line checks to verify food quality, flavor, and temperature compliance
• Maintain proper portioning and recipe adherence across all menu items
• Support recipe updates, menu specifications, and production needs as directed
Kitchen Operations
• Assist with daily kitchen preparation, production, and service execution
• Support kitchen setup, breakdown, and organization during events
• Follow prep sheets, production plans, and line layouts to support efficient food production
• Maintain accurate par levels and communicate product needs to culinary leadership
• Assist with food transportation and service across kitchen locations when needed
Food Safety, Sanitation & Compliance
• Maintain strict adherence to all food safety and sanitation standards
• Complete temperature logs, cleaning schedules, and food safety procedures as required
• Ensure kitchen areas remain clean, organized, and compliant with health department regulations
• Support compliance with Levy’s Core Signature food safety and sanitation standards
Inventory & Cost Awareness
• Assist with inventory processes and product tracking
• Support proper product storage, labeling, and rotation practices
• Monitor food waste and follow procedures designed to minimize waste
• Assist with maintaining accurate product usage and kitchen organization
Collaboration & Operational Support
• Work collaboratively with culinary team members to execute events efficiently
• Communicate effectively with culinary leadership regarding kitchen needs and production updates
• Support culinary leadership with operational needs during high-volume events
• Assist with special events, projects, and additional operational needs as required
• Perform additional duties as assigned
Skills & Experience:
Required:
• 2+ years of experience in a professional kitchen environment
• Culinary degree or formal culinary training
• Experience in high-volume culinary operations
• Strong knowledge of food preparation techniques and kitchen procedures
• Understanding of food safety and sanitation practices
• Ability to work efficiently in a fast-paced, event-driven environment
• Experience in stadium, arena, hotel, or large-scale catering operations
• ServSafe Certification
• Passion for hospitality, food, and guest experience
Physical Requirements:
• Ability to stand for extended periods during events
• Ability to lift up to 50 lbs
• Ability to work nights, weekends, and holidays based on event schedules
